Blackened Salmon

SIMPLE + HEALTHY

I love finding a recipe that is simple, delicious and healthy too!  We like to eat fresh fish from time to time and this recipe is amazing.  It is Blackened Salmon taken from the Simply Divine cookbook:

Blackened Salmon

Fresh salmon (I bought wild-caught at Aldi)

Olive oil

Spice mixture:

2 Tablespoons paprika

1 Tablespoon cayenne pepper

1 Tablespoon garlic powder

2 teaspoons salt

1/2 teaspoon pepper

1/4 teaspoon thyme

1/4 teaspoon basil

1/4 teaspoon oregano

*Directions: Rub salmon with olive oil and sprinkle with spice mixture.  Fry a few minutes on each side, until flaky.  Then drizzle with lime or lemon juice.

*Tip:  I, actually, used a seasoning mix I had on hand called Magic Seasoning Blends-Blackened Redfish Magic which you can, also, buy on Amazon here:

*Another tip is not to overcook the salmon!  Use a food thermometer and remove it from the pan when it reaches 120 or 125 degrees.

You can serve this over rice with some fresh veggies on the side and it is a simple healthy meal!
